I love a good versatile pancake recipe where I can add blueberries, chocolate chips, or anything else I desire for the morning in and not worry about it messing with the texture too much. For years I struggled to find one that consistently gave me fluffy pancakes like their photos promised. One day, I really wanted pancakes however I had no eggs so I began a search for a recipe for egg-less pancakes. I should also add, I am not a huge fan of syrup and prefer to eat my pancakes plain, this made my search extra difficult. I stumbled upon one that looked very promising and gave it a try; needless to say it wasn’t exactly what I was looking for but after years of trying several pancake recipes, I knew a couple of changes I could make that would make them perfect!
Now, I am not perfect and neither was my first or second batch, but they were tolerable. The third time though was a charm, like they always say, however I didn’t write down what I did. I have a bad habit of trying new recipes, deviating from them (sometimes a lot) and not writing down anything. This is exactly what I did with this recipe but since I make these at least once a month I finally wrote down and measured what I did!
I hope you love these as much as I do! You can adjust the sugar content to fit your preference, I made these a little sweeter than normal recipes so I don’t have to use syrup but stil get a slightly sweet flavor when I am eating them, afterall isn’t that the point of pancakes? When I’m craving a little more cinnamon flavor, I add a 1/4 teaspoon in or maybe some chocolate chips or blueberries! Give it a try and let me know what you think!
